Messing around with vegetables sounded fun today!
I threw together the following to make a vegetable masala then let it simmer for a little while.
- 1 x Medium Onion
- 1 x Zucchini Squash
- 1 x Yellow Squash
- A little Asparagus
- 1 x Can of Fire Roasted Tomatoes
- 2 Table Spoons of Tomato Paste
- 1 x Can of Coconut Milk
- 2 Table Spoons of Curry Powder
- 2 x Cans of Chick Peas
- Salt and Pepper to taste
Vegan for 4 days now!
