Quick Vegan Meal

Not all veggie burgers are vegan, but Amy’s makes a few different varieties that are. We needed a quick meal tonight, and nothing cooks as quick as a few thing veggie patties. Around 3-4 minutes in a oiled frying pan will cook them through, and then you have dinner.

To make it quick and a complete meal you need buns and some fixin’s. The buns can be a bit tricky, but you can find vegan breads and I believe the nature’s own whole wheat sandwich thins are vegan – they’ve got nothing on the ingredient list that suggests otherwise to me.

My favorite additions?

Red Onions
Guacamole
Pickles

Other ideas?

Vegan BBQ Sauce
Flavored Hummus
Purred Steamed Veggies

Some days you need something quick solution to keep on track, and hopefully this is a helpful thing to keep around.
